Ingredients
  • 1 T. butter
  • 2 stalks celery, chopped
  • 1 medium onion, chopped
  • 3 cups double-strength chicken stock
  • 6 large potatoes, cubed
  • 2 carrots, peeled and sliced
  • 3/4 t. seasoned salt
  • 1/2 t. thyme leaves
  • 1/2 t. rosemary, crushed
  • 1/4 t. garlic powder
  • 1/4 t. pepper
  • 2 cups milk
  • 1 cup shredded cheddar cheese

Directions
  1. Melt butter in a large saucepan or soup pot over low heat.
  2. Add celery and onion and saute about 2 to 3 minutes until onion is transparent. Add chicken stock. Add all remaining ingredients except milk and cheese. Simmer about 2 to 30 minutes until vegetables are tender. Remove from heat. Mash vegetables wiht a potato masher. Add milk and cheese. Cook, stirring constantly, until cheese is melted.
