Ingredients

1 T. butter

2 stalks celery, chopped

1 medium onion, chopped

3 cups double-strength chicken stock

6 large potatoes, cubed

2 carrots, peeled and sliced

3/4 t. seasoned salt

1/2 t. thyme leaves

1/2 t. rosemary, crushed

1/4 t. garlic powder

1/4 t. pepper

2 cups milk

1 cup shredded cheddar cheese

Directions

Melt butter in a large saucepan or soup pot over low heat.

Add celery and onion and saute about 2 to 3 minutes until onion is transparent. Add chicken stock. Add all remaining ingredients except milk and cheese. Simmer about 2 to 30 minutes until vegetables are tender. Remove from heat. Mash vegetables wiht a potato masher. Add milk and cheese. Cook, stirring constantly, until cheese is melted.
