I just found this recipe and it sounded so good... you can make it as hot as you want by adjusting the tabasco sauce... this recipe and photo are from the Texas Beef Council..

Ingredients
  • 5 lbs. beef back ribs
  • 4 cups beef stock
  • 1 medium onion, sliced thin
  • 1 bottle dark beer
  • 1 Tbsp. garlic, minced
  • 1 tsp. thyme
  • 1/2 tsp. Chipotle powder
  • 3 tsp. salt
  • 1/2 cup molasses
  • 3 Tbsp. balsamic vinegar
  • 2 Tbsp. Tabasco sauce

Directions
  1. In a 5 quart Dutch oven combine beef broth, onions, beer, garlic and 1 tsp. salt.
  2. Rub the ribs with thyme and chipotle powder.
  3. Add to Dutch oven and bring to a simmer. Cover. Set the Dutch oven in a 350°F oven for about 1-1/2 hours.
  4. Remove from oven and cool ribs in liquid. Remove ribs and reduce liquid to about a cup and reserve.
  5. Mix together the reduced broth from ribs, molasses, balsamic vinegar, Tabasco and remaining salt. Use as a sauce for ribs.
