Colorful And Crunchy Broccoli Salad

- 2 heads fresh broccoli, cut into small florets shopping list
- 1/2 cup red onion, diced shopping list
- 1 cup shredded carrot shopping list
- 3/4 cup dried cranberries shopping list
- 3/4 cup sliced almonds shopping list
- 1/2 cup chopped, seeded english cucumber shopping list
- 1/3 cup white wine vinegar shopping list
- 1/2 cup olive oil shopping list
- 1/2 tsp, dried thyme shopping list
- 1/2 tsp. dried oregano shopping list
- 1/2 tsp. Dijon mustard shopping list
- 1/2 tsp garlic powder shopping list
- salt and pepper to taste shopping list
- 2 tbsp. chopped fresh parsley shopping list
How to make it
- Mix broccoli, onion, carrot, cranberries, almonds and cucumber in a large bowl.
- Whisk together vinegar, olive oil, thyme, oregano and mustard; pour over vegetables and toss to coat.
- Season with salt and pepper; stir in parsley.
- Refrigerate for at least 1 hour before serving.
