Easy Lemon Coffeecake

- 1 box of cake mix.. white, yellow or lemon, made to the manufacturer's instructions shopping list
- 2 TB fresh lemon zest shopping list
- 3 TB fresh lemon juice shopping list
- Optional addition: 1/2 cup finely chopped walnuts shopping list
- icing shopping list
- 2 cups of powdered sugar shopping list
- 2 TB lemon zest shopping list
- 2 TB lemon juice shopping list
- You can substitute butter for the oil in the cake mix and also add 1/2 of sour cream for 1/2 of the water in the ingredients for a richer-flavored cake. shopping list
How to make it
- Mix all of the ingredients and bake according to the manufacturer's instructions.
- When the cake has cooled to "slightly warm" drizzle icing over the top of cake (and sprinkle with some extra walnuts.)
- You can also eat the cake without any icing, sprinkle it with powdered sugar or even sprinkle some toasted coconut over the top of the icing.
- You can use a bundt or tube pan. For a potluck, try using a jelly roll pan (and sprinke with powdered sugar).
