How to make it

  • Add some olive oil to a large pan over medium flame.
  • Saute garlic 3 min.
  • Next add in the onion and cook for approx. 4-5 min.
  • Then add in your celery and carrots, cook for about 1-2 min.
  • Add in your broth, water, and tomato sauce, letting this come to a boil(stir).
  • You can add your wine at this point.
  • Now reduce your flame to low and then ad in your kidney beans, green beans, spinach leaves, zucchini, oregano, basil, salt and the pepper.
  • You will want to let this simmer for around 30-40 min.
  • Now in a separate pan, fill with water and bring the flame to medium(you want a full boil.
  • Add in the macaroni coon till al dente.
  • Drain macaroni and add to soup.
  • Ladle into bowls with sprinkled parmesan on top.

    Next time I make this soup I'm going to leave out the pasta and add some cheese tortellini.

    This soup is excellent! I used fresh green beans and added the entire bag of baby spinach and also added about a cup of cauliflower florets. I also used 4 c. chicken broth and added water as needed to adjust consistency of stock. Recipe makes a lot so bring your "hungry" to the table!
