  I love soup! and was in the mood for a good minestrone and found this recipe. It is identical to Jamie's Minestrone on Allrecipes so I knew it would be good.
  
  Happy to have made for November's soup challenge!
  
  My review: "This soup is excellent! I used fresh green beans and added the entire bag of baby spinach and also added about a cup of cauliflower florets. I also used 4 c. chicken broth and added water as needed to adjust consistency of stock. Recipe makes a lot so bring your "hungry" to the table!"
