Pastel De Tres Leches Three Milk Cake Recipe
Since moving to Mexico 5 years ago, this has become one of my favourite desserts. Based on a recipe from Nestle - and my chocolate version is even better!

Ingredients
  • CAKE
  • 6 eggs separated
  • 1 cup of flour
  • 1/2 cup sugar separated
  • 1/2 tsp baking powder
  • SUERO
  • 1tin condensed milk (14oz)
  • 1 tin media crema (7.6 fl oz) I think this is half and half?
  • 1 tin evaporated milk (5 fl oz)
  • 1 tsp vanilla extract
  • ICING
  • 1 cup whipping cream
  • 2 tbsp caster sugar
  • 1/2 tsp vanilla extract

Directions
  1. Beat egg whites with half of sugar until they form peaks
  2. Beat egg yolks with other half of sugar
  3. fold the egg/sugar mixtures into your flour and baking powder, alternately
  4. pour cake mix into spring form bake tin and bake for approx. 20 min at 375
  5. allow cake to cool in tin (DO NOT remove from tin)
  6. mix together your milks and your vanilla
  7. use a toothpick to make holes all over the surface of the cooled cake
  8. Use a tbsp to cover the top of the cake with the milks and be sure to pour down the sides of the cake tin
  9. Leave to stand for approx 45 min (until all of the mixture has been absorbed into the cake)
  10. Remove cake from tin
  11. Mix together icing ingredients and cover cake.
  12. Serve with any remaining suero.
  13. FOR A CHOCOLATEY VERSION
  14. Add 1/3 cup of cocoa to flour mix
  15. Add 1/3 cup of Kahluah to the suero
  16. Add 1 tbsp cocoa to icing (and I like to add chocolate sprinkles...)
