Ingredients
  • 18 pint canning jars with lids
  • 14lbs of tomatoes
  • 6 cloves of garlic, finely diced (optional)
  • 9 onions, diced
  • 9 red bell peppers, diced
  • 9 green bell peppers, diced
  • 3 bunches cilantro
  • 1/2 cup lemon juice
  • 2 tablespoons salt
  • pepper and Tabasco to taste (optional)

Directions
  1. Dice tomatoes and place in pot.
  2. Dice onions, peppers, and garlic.
  3. Mix onions, peppers, and garlic with tomatoes.
  4. Slowly bring to a simmer.
  5. After coming to a simmer, add chopped cilantro.
  6. Simmer for 10 minutes.
  7. Can using hot pack method with 1/2" head space.
  8. Process with a water bath for 15 minutes at 212F.
  9. Cool on towel separated by 1".
