Ingredients

1/2 cup butter

3 large eggs

1/4 cup sugar

1 tsp baking powder

1 cup all-purpose flour, sifted BEFORE measuring

1/2 cup undiluted, thawed, frozen lemonade concentrate

1/2 tsp salt

Directions

Preheat oven to 375F. Grease 12 medium or 15 small muffin cups.

Cream together sugar and butter until they are of a creamy consistency.

Add eggs, then beat mixture until light.

Sift flour (again) with baking powder and salt.

Add flour mixture to creamed ingredients, alternately with some of the lemonade, until both are completely incorporated. Stir between additions.

Fiol prepared muffin cups each 2/3 full of batter.

Bake in preheated oven for 20 minutes or until lightly browned.
