How to make it

  • Divide cheese into 3 equal lots
  • Lightly butter a large glassbaking dish (approx 22 cm x 35 cm)
  • Scatter the shallots evenly into dish
  • Crumble one part of the ricotta over the shallots
  • Layer the sliced tomato next with salt and pepper to taste
  • Crumble the second part of the ricotta over the tomatoes
  • Layer the sliced zucchini
  • Crumble the third part of the ricotta over the zucchini
  • Sprinkle the parmesan over
  • Bake at 180 C for about 50 - 60 min until golden on top
  • Turn the dish once if required for even cooking
  • Serve with crusty bread and salad
