Easy Ricotta Bake Recipe

Ingredients
  • 2 kilos ricotta
  • bunch of shallots (10-12), finely chopped
  • or 2- 3 leeks, thinly sliced
  • 10 tomatoes, sliced
  • 4 - 6 zucchini, sliced lengthways
  • 200 gms parmesan cheese

Directions
  1. Divide cheese into 3 equal lots
  2. Lightly butter a large glassbaking dish (approx 22 cm x 35 cm)
  3. Scatter the shallots evenly into dish
  4. Crumble one part of the ricotta over the shallots
  5. Layer the sliced tomato next with salt and pepper to taste
  6. Crumble the second part of the ricotta over the tomatoes
  7. Layer the sliced zucchini
  8. Crumble the third part of the ricotta over the zucchini
  9. Sprinkle the parmesan over
  10. Bake at 180 C for about 50 - 60 min until golden on top
  11. Turn the dish once if required for even cooking
  12. Serve with crusty bread and salad
