Easy Ricotta Bake

- 2 kilos ricotta shopping list
- bunch of shallots (10-12), finely chopped shopping list
- or 2- 3 leeks, thinly sliced shopping list
- 10 tomatoes, sliced shopping list
- 4 - 6 zucchini, sliced lengthways shopping list
- 200 gms parmesan cheese shopping list
How to make it
- Divide cheese into 3 equal lots
- Lightly butter a large glassbaking dish (approx 22 cm x 35 cm)
- Scatter the shallots evenly into dish
- Crumble one part of the ricotta over the shallots
- Layer the sliced tomato next with salt and pepper to taste
- Crumble the second part of the ricotta over the tomatoes
- Layer the sliced zucchini
- Crumble the third part of the ricotta over the zucchini
- Sprinkle the parmesan over
- Bake at 180 C for about 50 - 60 min until golden on top
- Turn the dish once if required for even cooking
- Serve with crusty bread and salad
