How to make it

  • Combine watermelon, red onion, vinegars, canola oil, basil and parsley in a blender or food processor.
  • Pulse on and off about 30 seconds until combined.
  • Add salt and pepper.
  • Serve over boston or bibb lettuce greens,
  • Great additions to the salad greens would be watermelon balls and/or strawberry slices, sprinkled over all with crumbled feta.
  • There is something magical about balsamic vinegar and black pepper over watermelon or ripe strawberries.
  • This dressing makes a salad sing.
