Watermelon Vinaigrette

- 4 cups fresh watermelon, chopped and drained shopping list
- 1/4 cup red onion, diced small shopping list
- 2 Tablespoons honey shopping list
- 1/4 cup of apple cider vinegar less one tbsp shopping list
- 1 tbsp of balsalmic vinegar shopping list
- 3/4 cup canola oil shopping list
- 2 Tablespoons fresh basil, chopped shopping list
- 1 Tablespoon fresh parsley, chopped shopping list
- 1/4 tsp of sea salt shopping list
- 1/2 tsp of fresh cracked black pepper shopping list
How to make it
- Combine watermelon, red onion, vinegars, canola oil, basil and parsley in a blender or food processor.
- Pulse on and off about 30 seconds until combined.
- Add salt and pepper.
- Serve over boston or bibb lettuce greens,
- Great additions to the salad greens would be watermelon balls and/or strawberry slices, sprinkled over all with crumbled feta.
- There is something magical about balsamic vinegar and black pepper over watermelon or ripe strawberries.
- This dressing makes a salad sing.
