Mexicana Chicken

- 4 eggs shopping list
- 1 bottle green chile salsa shopping list
- 2 c fine bread crumbs shopping list
- 1/4 tsp salt shopping list
- 2 tsp each chile powder and cumin shopping list
- 1-1/2 tsp garlic salt shopping list
- 1/2 tsp oregano shopping list
- 6 boneless,skinless chicken breasts shopping list
- 1/4 c olive oil shopping list
- 4 c shredded lettuce shopping list
- 2 bunches scallions,sliced shopping list
- 3 tomatoes,sliced shopping list
- 3 limes sliced shopping list
- 3 avocados,sliced shopping list
How to make it
- Mix eggs and half of salsa in medium bowl. Mix bread crumbs and seasonings together in another bowl. dip chicken in salsa mixture,then bread crumb mixture. Fry slowly till done.
- Create each serving by laying piece of chicken on a bed of lettuce. Then place a little salsa on chicken,followed by a dollop of sour cream on top of salsa. sprinkle with scallions. Garnish with tomatoes,limes and avocados.
