Planked Salmon With Cucumber Dill Sauce Recipe

I find a bonanza of really good recipes on cards at my local Hannaford grocery. I happened on this one this weekend.......yummy!!!!

Ingredients
  • 1 /12 lbs salmon filets, skin on
  • 2 Tbl olive oil
  • 2 Tbl brown sugar
  • 2 garlic cloves, minced
  • 2 tsp dried dill, divided
  • 1 medium cucumber, peeled, seede and thinly sliced
  • 2 Tbl plain yougurt or sour cream
  • 1 tsp white wine vinegar

Directions
  1. Submerge cedar plank in cold water at least an hour or overnight
  2. Brush skin side of filiets and place in a large
  3. In a small bowl combine brown sugar, garlic and 1 tsp of the dill
  4. Spread mixture over salmon, pressing to coat
  5. Cover and refrigerate at least one hour
  6. Preheat grill to medium low
  7. Place plank on grill and heat until they begin to smoke, about 5 minutes
  8. Season salmon with salt and pepper to taste and place skin side down on plank
  9. Grill covered about 20 minutes or until fish slakes easily with a fork
  10. Meanwhile, for sauce, in a small bowl combine remaining dill, cucumber, yogurt or sour cream, vinegar and salt and pepper to taste; stir, chill, serve with salmon
