How to make it

  • Combine the chuck, parsley, scallions, and a dash of salt and pepper; divide evenly into 4 portions and shape into 1-in thick oval shaped patties. Place 2 tbsp of flour in a shallow dish, dredge each patty in the flour. Reserve 1 tbsp of flour
  • Heat 1 tbsp oil in a sauté pan over medium-high heat; add the patties and sauté for 3 minutes on each side or until browned. Remove from pan
  • Add the onions and sugar to the pan and sauté for 5 minutes. Stir in the garlic and tomato paste; sauté 1 minute. Sprinkle the flour on top, stir, and cook 1 minute. Stir in the broth and wine, and then add a dash of salt and the thyme
  • Return the meat to the pan and bring to a boil. Reduce heat, cover, and cook for 10 minutes.
  • Serve steaks on top of crusty bread slices in shallow bowls and ladle the soup all around, garnish with 4 tbsp parsley and parmesan cheese. Eat with knife and fork!
