I adapted this recipe from one I found on a tv station recipe site

Ingredients
  • ½ cup fresh blueberries
  • ½ cup fresh raspberries
  • ½ cup fresh blackberries, halved
  • ½ cup strawberries sliced
  • 2 tbs lemon zest
  • ¼ cup each, red, green and golden bell peppers, seeded and cut into ¼-inch dice
  • 1 tomatillo tomato, seeded and cut into ¼-inch dice
  • 2 roma tomatoes, seeded and cut into ¼-inch dice
  • 1 jalapeño pepper, seeded and finely minced
  • 1 rib celery finely diced
  • 1 finely chopped garlic clove

Directions
  1. In a large glass bowl, gently crush and fold the prepared berries with the savory ingredients.
  2. Chill salsa for one hour to allow the flavors to blend and develop.
  3. This is exceptionally good with fish or veal. Enjoy.

This will be worth the trip to my mosquito infested back yard to pick raspberries, Yum. If I run fast I may find wild blackberries too.


Yummy sounding salsa - I love fruit salsas and use them on about anything! Can't wait to try this one.
