Skillet Buttermilk Cornbread Recipe
This is an un-traditional white cornbread recipe but it tastes wonderful and the presentation is beautiful--the margarine makes a swirly pattern on top.

Ingredients
  • 1/2 stick margarine (or if you're feeling decadent--1 stick)
  • 1 C self-rising WHITE cornbread*
  • 1 C self-rising white flour
  • 1/4 C sugar
  • 4T baking powder
  • 1 C buttermilk
  • 1 C water
  • 1 large egg
  • 1/4 C corn oil
  • *if you can't find this, just add 1/4t baking soda to regular corn meal

Directions
  1. Preheat oven to 400F, with 10" cast iron skillet inside
  2. Mix the rest of the ingredients IN ORDER, in a large bowl
  3. Take skillet out of oven carefully, add margarine, return to oven to melt
  4. Remove skillet after margarine is bubbling, and pour cornbread mix on top, straight into the middle--lightly swirl any marg. that pools
  5. Return skillet to bake for about 20 minutes, until sides are browned and pulling away from the skillet, and a knife or toothpick comes out clean from the center.
  6. Slice and serve!
