Skillet Buttermilk Cornbread

- 1/2 stick margarine (or if you're feeling decadent--1 stick) shopping list
- 1 C self-rising WHITE cornbread* shopping list
- 1 C self-rising white flour shopping list
- 1/4 C sugar shopping list
- 4T baking powder shopping list
- 1 C buttermilk shopping list
- 1 C water shopping list
- 1 large egg shopping list
- 1/4 C corn oil shopping list
- *if you can't find this, just add 1/4t baking soda to regular corn meal shopping list
How to make it
- Preheat oven to 400F, with 10" cast iron skillet inside
- Mix the rest of the ingredients IN ORDER, in a large bowl
- Take skillet out of oven carefully, add margarine, return to oven to melt
- Remove skillet after margarine is bubbling, and pour cornbread mix on top, straight into the middle--lightly swirl any marg. that pools
- Return skillet to bake for about 20 minutes, until sides are browned and pulling away from the skillet, and a knife or toothpick comes out clean from the center.
- Slice and serve!
