Chicken Topped With Pineapple Sauce And Walnuts Recipe
CHICKEN TOPPED WITH PINEAPPLE SAUCE AND WALNUTS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pittman Estate in Hurst, Texas in 1993.

Ingredients
  • 1 pound chicken scaloppini
  • 2 teaspoons vegetable oil
  • 3 tablespoons flour
  • 1/4 cup chopped green onions
  • 2 tablespoons chopped walnuts
  • 1/4 cup pineapple juice concentrate
  • 1/4 cup water
  • 1 tablespoon honey
  • 1 tablespoon fresh lime juice
  • 1 teaspoon grated lime zest

Directions
  1. Flatten chicken to 1/4" thickness between two sheets of waxed paper.
  2. In large nonstick skillet sprayed with vegetable spray heat oil over medium high heat.
  3. Dredge chicken in flour and cook 3 minutes per side or until just done at center.
  4. Place on a serving dish and cover then add green onions and walnuts to skillet.
  5. Cook for 2 minutes then add pineapple juice concentrate, water, honey, lime juice and lime zest.
  6. Bring to a boil for 1 minute or until slightly syrupy and thickened then serve sauce over chicken.
