Turkey Cutlets Recipe

Ingredients
  • 2 teaspoons olive oil
  • 1 pound turkey cutlets
  • 1/2 teaspoon salt
  • 1/4 teaspoon coarsely ground black pepper
  • 1/3 cup orange marmalade
  • 2 tablespoons red wine vinegar
  • 1 tablespoon grated peeled fresh ginger
  • 1 small navel orange cut into wedges
  • Parsley sprig for garnish

Directions
  1. In nonstick skillet heat oil over medium high heat until hot.
  2. Add turkey cutlets then sprinkle with salt and pepper and cook 4 minutes per side.
  3. Combine marmalade, vinegar and ginger then add mixture to cutlets in skillet and heat to boiling.
  4. Garnish with orange wedges and parsley when serving.

This looks great - would have to sub diabetic marmalade but I love the idea of the taste combination of orange, marmalade and turkey!
