Rhubarb-Strawberry-Vanilla Jam Recipe

Ingredients
  • 1kg rhubarb
  • 500g strawberries
  • 1 vanilla pod (or vanilla aroma)
  • 500g sugar
  • pectin 3:1

Directions
  1. Cut rhubarb stalks into 1cm pieces
  2. do not peel the rhubarb
  3. quarter strawberries
  4. put rhubarb pieces in a large pot and simmer until tender (2-3 minutes)
  5. add strawberries, sugar, vanilla and pectin
  6. boil for 3 minutes
  7. fill into sterilised jars
  8. close jars and stand them upside down for about 10 minutes
