Mole Rub Recipe
This simple rub adds an earthy,subtle flavor to beef or pork. Use ancho chili powder instead of regular chili powder or add cayenne for a spicier kick if desired.

Ingredients
  • 1-1/2 Tbs unsweetened cocoa powder
  • 1-1/2 Tbs lt. brown sugar
  • 1-1/2 Tbs chili powder
  • Steak or pork chops,tenderloin etc.

Directions
  1. In a small bowl,combine cocoa powder,brown sugar and chili powder.
  2. Press rub into meat on both sides.Coat meat lightly with olive oil.,sprinkle with kosher salt and pepper. Place on grill and cook to desired doneness.
  3. Store rub in airtight canister in cool,dry place.

Alterations


Sometimes, I'll take 2 Tbs. Starbucks Espresso Roast coffee beans and grind them to the consistency of talc and add that to the mixture.

It adds an unexpected smoky/earthy flavor to red meat that is out of this world.
