Mole Rub

This simple rub adds an earthy,subtle flavor to beef or pork. Use ancho chili powder instead of regular chili powder or add cayenne for a spicier kick if desired.
Ingredients
- 1-1/2 Tbs unsweetened cocoa powder shopping list
- 1-1/2 Tbs lt. brown sugar shopping list
- 1-1/2 Tbs chili powder shopping list
- steak or pork chops,tenderloin etc. shopping list
How to make it
- In a small bowl,combine cocoa powder,brown sugar and chili powder.
- Press rub into meat on both sides.Coat meat lightly with olive oil.,sprinkle with kosher salt and pepper. Place on grill and cook to desired doneness.
- Store rub in airtight canister in cool,dry place.
