Walsh Rum Cake Recipe
An easy rum cake that's great for parties, potlucks, breakfast, or dessert. Goes great on "Talk Like a Pirate" day.

Ingredients
  • 18oz organic yellow cake mix
  • 3/4oz package vanilla instant pudding & pie filling
  • 4 eggs
  • 1/2 c canola oil
  • 1/2 c cold water
  • 1 c dark rum (80 proof; we use Captain Morgan's)
  • 1/4 lb butter (1 stick)
  • 1/4 c water
  • 1 c sugar

Directions
  1. Preheat oven to 325F
  2. Great & flour 10: tube or 12c bundt pan
  3. Mix cake mix, pudding mix, eggs, oil, water, and 1/2 c of the rum
  4. Bake until toothpick comes out clean (ca. 45 mins, but watch carefully)
  5. Invert cake on serving plate
  6. Melt butter in saucepan
  7. Stir in water and sugar
  8. Boil 5 mins
  9. Turn off heat then stir in remaining rum
  10. Spoon glaze slowly over cake, allowing rum to be soaked up slowly

Oh, fun stuff. I like "Talk like a pirate day" too. Of course this would be a natural for Gasparilla in Tampa...everyone has a rum cake that day.
