How to make it

  • Preheat oven to 180C
  • Lightly grease 8 small foil pie plates, 8cmx2cm.
  • Combine all ingredients for pastry in a food processor.Using the steel blade, process until pastry binds together. cut pastry into 8equal pieces and roll out to fit the pie plates.Trim edges and place on a baking tray. Cook for 10mnt. Let cool.
  • To make the custard, bring 1 1/2 cups milk to just below boiling point in a medium sauce pan. combine rest of milk with the cornflour, vanilla and orange rind to make a paste.Add to milk and stir briskly until thick. Cook for 2 minutes, stirring continuosly.
  • remove from heat, add apple juice and mix well.Cool slightly.
  • Pour custard into shells,refrigerate.Decorate the tops with fresh strawberries
