Ingredients
  • 2 Cups Strawberries, Washed and hulled
  • PASTRY
  • 1 Cup unbleached wholemeal plain flour
  • 1 Cup rolled oats
  • 1/4 Cup cold pressed grapeseed oil
  • 2 Tbs apple juice concentrate
  • 2-4 Tbs unsweetened orange juice
  • CUSTARD
  • 2 cups low -fat milk
  • 1/2 cup corn flour
  • 1Tps Vanilla essence
  • 1Tbs grated orange rind
  • 2-3 Tbs apple juice concentrate
  • 1/2cup non-fat yogurt

Directions
  1. Preheat oven to 180C
  2. Lightly grease 8 small foil pie plates, 8cmx2cm.
  3. Combine all ingredients for pastry in a food processor.Using the steel blade, process until pastry binds together. cut pastry into 8equal pieces and roll out to fit the pie plates.Trim edges and place on a baking tray. Cook for 10mnt. Let cool.
  4. To make the custard, bring 1 1/2 cups milk to just below boiling point in a medium sauce pan. combine rest of milk with the cornflour, vanilla and orange rind to make a paste.Add to milk and stir briskly until thick. Cook for 2 minutes, stirring continuosly.
  5. remove from heat, add apple juice and mix well.Cool slightly.
  6. Pour custard into shells,refrigerate.Decorate the tops with fresh strawberries
