JKs Roasted Potato Wedges

- 3 lbs potatoes - i usually use white or idaho potatoes shopping list
- 1/4 cup vegetable oil - i ususally use a blend of canola and olive oils shopping list
- 1 tbs dried garlic (pieces and not powder) shopping list
- 1 tbs dried onions shopping list
- 1 tbs dried parsley shopping list
- 1 tbs dried cilantro shopping list
- 1 tsp cayenne pepper shopping list
- 1 tsp chili powder shopping list
- salt & pepper to taste shopping list
How to make it
- Wash potatoes, leaving skin in tact
- cut potatoes in to wedges and place in a mixing bowl
- add oils and seasonings and mix well
- refrigerate potatoes for a couple of hours to let marinate (not necessary if there is a time crunch)
- preheat oven to 400.
- place potatoes in a roasting pan and roast in oven for about an hour, stirring potatoes every 20 minutes
- i serve with my garlic cilantro roasted chicken and a green salad.
