How to make it

  • Wash potatoes, leaving skin in tact
  • cut potatoes in to wedges and place in a mixing bowl
  • add oils and seasonings and mix well
  • refrigerate potatoes for a couple of hours to let marinate (not necessary if there is a time crunch)
  • preheat oven to 400.
  • place potatoes in a roasting pan and roast in oven for about an hour, stirring potatoes every 20 minutes
  • i serve with my garlic cilantro roasted chicken and a green salad.
