Sweet, tangy Barbeque pork with a touch of heat serve on toasted pumpernickel. A side of cole slaw is a wonderful accomplice.

Ingredients
  • 2 pork chops.
  • 1 tsp of dijon mustard.
  • 6 tsps of KC Masterpiece BBQ sauce.
  • 3 dashes of chipotle pepper sauce.
  • Salt and pepper to taste.
  • Sliced monterey jack cheese.
  • 1/2 sliced onion.
  • 4 slices of pumpernickel.

Directions
  1. Blend dijon mustard, BBQ sauce, pepper sauce, salt and pepper into a sauce.
  2. Brush some of the sauce onto the chops.
  3. On the grill or in a skillet, sear the pork chops and brush on the sauce after each side has been turned.
  4. Grill onions in oil or butter until caramelization begins.
  5. Grill the bread slices on one side only until lightly toasted.
  6. Lay grilled onions on un-toasted side of 2 of the bread slices.
  7. Lay jack cheese on un-toasted side of other 2 slices while still warm in order to melt the cheese.
  8. Lay each cooked pork chop on an onion topped slice of toast.
  9. Lay the cheese topped slices upon the open-faced sandwiches (Cheese side down preferably).
