Spicy Lamb Patties Recipe
A lovely savoury lamb burger, with many intermingling complementary flavours. Not sure where I got this recipe but I've had it for years. Prep time does not include chill time.

Ingredients
  • 2 lbs. ground lamb. Don't use really lean meat - a bit of fat will give the patties great flavour.
  • 4 tablespoons fresh mint, chopped
  • 4 tablespoons fresh coriander, chopped
  • 4 tablespoons fresh oregano, chopped
  • 2 tablespoons garlic, minced
  • 2 teaspoons sherry
  • 2 teaspoons white wine vinegar
  • 2 teaspoons treacle or molasses
  • 2 teaspoons ground cumin
  • Half a teaspoon ground allspice
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper

Directions
  1. Mix all ingredients together well in a large bowl. Use your hands!
  2. Form into 3/4 inch thick patties.
  3. Refrigerate for 3-4 hours (separate patties with wax paper if possible).
  4. Preheat the grill to medium heat (direct heat from above on an indoor grill is how I do it).
  5. Grill the patties about 6-7 minutes each side - there must be no pink left inside them. Cut one open to check.
  6. The recipe makes about 12 patties but may make more or less, depending on exactly how thick they are.
  7. Serve any way you like - on rolls or plated with a side dish or salad.
