Ingredients
  • 1 Med to large eggplant, sliced into 1/2" - 1/4" thick slices
  • 1 jar spaghetti sauce
  • Mushrooms sliced (enough to cover one layer 6-10 Med)
  • Fresh spinach (about two cups)
  • 1-2 Cups bread crumbs
  • 2 eggs whisked
  • Mozzarella cheese, shredded (4-8 oz)

Directions
  1. Place eggs in a bowl and set aside
  2. place bread crumbs in small bowl and set aside
  3. Dip slices of eggplant in egg then roll in bread crumbs
  4. Fry in pan until tender and golden brown
  5. Place on paper towel lined plate to drain excess grease, let cool
  6. Line a 13"x9" baking dish with spaghetti sauce (about 1/2 jar enough to just cover the bottom of the dish)
  7. Layer the eggplant in the dish in rows, continue this until you have one layer
  8. Layer mushrooms on top of egg plant
  9. Layer spinach on top of mushrooms
  10. Cover with remaining sauce
  11. Cover with mozzarella cheese
  12. Place in a 350 degree oven and bake until cheese is bubbly and golden, about 30 minutes.

Sounds good! I keep threatning to make this for my hubby since he likes eggplant but haven't yet. I guess I really should.

(I think you meant 'fava' beans LOL... Guess you wont be serving liver with some fava beans and a nice chianti... on the side.)
