Ingredients

How to make it

  • Place eggs in a bowl and set aside
  • place bread crumbs in small bowl and set aside
  • Dip slices of eggplant in egg then roll in bread crumbs
  • Fry in pan until tender and golden brown
  • Place on paper towel lined plate to drain excess grease, let cool
  • Line a 13"x9" baking dish with spaghetti sauce (about 1/2 jar enough to just cover the bottom of the dish)
  • Layer the eggplant in the dish in rows, continue this until you have one layer
  • Layer mushrooms on top of egg plant
  • Layer spinach on top of mushrooms
  • Cover with remaining sauce
  • Cover with mozzarella cheese
  • Place in a 350 degree oven and bake until cheese is bubbly and golden, about 30 minutes.

    Actually Mark, I thought there were 814, but who's counting? The internet says 2,841,365, but who's counting? Not one of those is like yours. Great post. Almost forgot, mind if I add 100mls or so of white wine to this? Thanks. RJ
