Eggplant Parmesan

- 1 Med to large eggplant, sliced into 1/2" - 1/4" thick slices shopping list
- 1 jar spaghetti sauce shopping list
- mushrooms sliced (enough to cover one layer 6-10 Med) shopping list
- fresh spinach (about two cups) shopping list
- 1-2 Cups bread crumbs shopping list
- 2 eggs whisked shopping list
- mozzarella cheese, shredded (4-8 oz) shopping list
How to make it
- Place eggs in a bowl and set aside
- place bread crumbs in small bowl and set aside
- Dip slices of eggplant in egg then roll in bread crumbs
- Fry in pan until tender and golden brown
- Place on paper towel lined plate to drain excess grease, let cool
- Line a 13"x9" baking dish with spaghetti sauce (about 1/2 jar enough to just cover the bottom of the dish)
- Layer the eggplant in the dish in rows, continue this until you have one layer
- Layer mushrooms on top of egg plant
- Layer spinach on top of mushrooms
- Cover with remaining sauce
- Cover with mozzarella cheese
- Place in a 350 degree oven and bake until cheese is bubbly and golden, about 30 minutes.

Sounds good! I keep threatning to make this for my hubby since he likes eggplant but haven't yet. I guess I really should.
