Stuffed Tomatoes wFeta

- 6 medium tomatoes, slightly firm shopping list
- 1 cup feta, crumbled shopping list
- 1/2 cup fresh basil, chopped (or dried . may substitute oregano) shopping list
- 1/4 cup olive oil shopping list
- 1 T black pepper shopping list
- 1/2 cup bread crumbs (opt.) shopping list
How to make it
- Preheat oven to 350F
- Rinse tomatoes & fresh basil
- Carefully slice top off tomatoes & scoop out inside, leaving nice, sturdy shell.
- Chopped the tomato pulp (do not drain)
- Chopped basil ; in a medium bowl, mix pulp , basil, pepper
- In a bowl, using a fork (or your hands!), crumble feta, leaving chunks.
- Add feta to pulp mixture
- Stuff each tomato w/mixture. Do not mash it down.
- Drizzle tomatoes w/olive oil (approx tsp. per tomato)
- Sprinkle bread crumbs on tops of tomato, if desired
- *As feta is salty, I do not add additional salt
- Place in oven-proof dish & bake at 350F for 20-30 minutes, till tops are golden.
- Let set for 10 minutes & serve hot or cold, as desired.
