How to make it

  • Preheat oven to 350F
  • Rinse tomatoes & fresh basil
  • Carefully slice top off tomatoes & scoop out inside, leaving nice, sturdy shell.
  • Chopped the tomato pulp (do not drain)
  • Chopped basil ; in a medium bowl, mix pulp , basil, pepper
  • In a bowl, using a fork (or your hands!), crumble feta, leaving chunks.
  • Add feta to pulp mixture
  • Stuff each tomato w/mixture. Do not mash it down.
  • Drizzle tomatoes w/olive oil (approx tsp. per tomato)
  • Sprinkle bread crumbs on tops of tomato, if desired
  • *As feta is salty, I do not add additional salt
  • Place in oven-proof dish & bake at 350F for 20-30 minutes, till tops are golden.
  • Let set for 10 minutes & serve hot or cold, as desired.
