Cheesy Broccoli-Potato Mash Recipe
This recipe is from Eating Well. We tried it and now it is a keeper. It is a good way to get more veggies in to the kids. It calls for fontina cheese, but I've used other cheeses such as cheddar and mozzarella.

Ingredients
  • 1 lb. Yukon Gold potatoes, cut into wedges
  • 3/4 lb. broccoli crowns, chopped (4 cups)
  • 3/4 cup shredded fontina cheese
  • 1/2 cup nonfat milk, heated
  • 1/2 tsp salt
  • freshly ground pepper

Directions
  1. Bring 1 inch of water to boil in a large pot.
  2. Place potatoes in a steamer basket and steam for 10 minutes.
  3. Place broccoli on top of potatoes, cover and steam until the potatoes and broccoli are tender, 6 to 8 minutes more.
  4. Transfer the broccoli to a large bowl and coarsely mash with a potato masher.
  5. Add the potatoes, cheese, milk, salt and pepper and continue mashing until desired consistency.

I wish I had this recipe yesterday. I made a broccoli casserole with rice and ground beef. This has 2 of my favorite things....cheese and potatoes. Sounds wonderful!
