  • 2 DOZ LITTLENECK CLAMS,(( SOAKED IN 1\2 TSP OF SALT, AND I TBSP OF CORNMEAL OR FLOUR FOR AT LEAST 3 HOURS OR OVERNIGHT))
  • TOPPING.
  • I TBSP OF OLIVE OIL
  • 2 CLOVES OF GARLIC MINCED
  • 4 TO 8 TBSP OF FLAVORED ITALIAN BREAD CRUMBS
  • 2 TBSP OF ROASTED RED PEPPER
  • 2 TBSP OF FRESH PARSLEY CHOPPED
  • 2 TBSP OF FINELY CHOPPED PANCETTA
  • DRY WHITE WINE
  • FRESH LEMON WEDGES

Directions
  1. RINSE AND SCRUB THE CLAMS,-CUT OPEN, SAVE THE SHELLS AND SAVE THE JIUCES,-STRAIN THE JIUCES AND
  2. ADD TO THE MIXTURE BELOW.
  3. IN A BOWL MIX TOGETHER ALL THE INGREDIENTS EXCEPT THE WHITE WINE,ADD THE BREAD CRUMBS A LITTLE AT A TIME TILL YOU GET SOMETHING THAT LOOKS LIKE A MEAT BALL NOT TOO WET NOT TO DRY-
  4. SPOON THE MIXTURE ONTO THE CLAMS SPRAY WITH THE WHITE WINE AND PUT IN THE BROILER,-
  5. AND BROIL TELL DONE 5 TO 8 M[N.'S,- SERVE HOT WITH LEMON WEDGES.
