Easy Oven Beef Stew Recipe
Easy and delicious beef stew. Put in the oven and forget it for 3 hours. From Mixing bowl!

Ingredients
  • 1-3/4 lbs round steak,cut in 1-1/2" cubes
  • 6 small potatoes,scrubbed and quartered
  • 2 carrots,sliced
  • 2 celery stalks,sliced
  • 2 med. onions,coarse chopped
  • 1 c vegetable juice
  • 1/2 c beef broth
  • 1/4 c red wine vinegar
  • 2 Tbs quick-cooking tapioca
  • 2 Tbs worcestershire sauce
  • 1 Tbs paprika
  • 1 tsp dried thyme,crushed
  • 1 bay leaf
  • 1/2 c chopped parsley

Directions
  1. Preheat oven to 325 degrees. In dutc oven,oe flameproof casserple dish,combine all ingredients except parsley. Stir well to combine.
  2. Bake,covered,until beef is tender,about 3 hours or slightly less. Stir in parsley and serve.

Don't know why I'm even looking at recipes with "oven" in the title, but...... looks good, Pat, but wonder why the tapioca? Think maybe as a thickener? (I hate tapioca pudding) I could probably leave it out. ;')
