Upside Down Shortcake

- 4 c Gooseberries or chopped rhubarb shopping list
- 1 3/4 c White sugar shopping list
- 3 Tbls butter shopping list
- 1 c flour shopping list
- 1 tsp baking powder shopping list
- 1/2 tsp salt shopping list
- 1/2 c milk shopping list
- 1 Tbls cornstarch shopping list
- 1 c boiling water shopping list
- red food coloring (when using rhubarb) shopping list
How to make it
- Will need unprepared 8" or 9" square pan at least 2" deep.
- Spread fruit in bottom of pan.
- Mix flour, baking powder & 1/4 tsp salt. Set aside.
- Cream 3/4 c sugar & butter.
- Add flour mix & milk to creamed mix.
- Spread evenly over fruit.
- Combine 1 c sugar, 1/4 tsp salt, & cornstarch.
- Sprinkle evenly over batter.
- Pour boiling water over all. (If using rhubarb, add a few drops of red food coloring to water before pouring.)
- Note: This will look like a complete mess at this point. It will cook up fabulously though & is fun to watch the progression. I'm easily entertained.
- Carefully put in oven & bake for 60 minutes. Top will be lightly browned & crusted when done.
- Serve warm or cool.
