How to make it

  • Will need unprepared 8" or 9" square pan at least 2" deep.
  • Spread fruit in bottom of pan.
  • Mix flour, baking powder & 1/4 tsp salt. Set aside.
  • Cream 3/4 c sugar & butter.
  • Add flour mix & milk to creamed mix.
  • Spread evenly over fruit.
  • Combine 1 c sugar, 1/4 tsp salt, & cornstarch.
  • Sprinkle evenly over batter.
  • Pour boiling water over all. (If using rhubarb, add a few drops of red food coloring to water before pouring.)
  • Note: This will look like a complete mess at this point. It will cook up fabulously though & is fun to watch the progression. I'm easily entertained.
  • Carefully put in oven & bake for 60 minutes. Top will be lightly browned & crusted when done.
  • Serve warm or cool.
