How to make it

  • Heat oil in skillet over medium heat.
  • Add mustard seeds.
  • As they begin to pop stir in curry paste.
  • Cook 1 minute
  • Add beans and about 3 cups of water (just enough to cover the beans)
  • Bring to a boil.
  • Reduce heat and simmer covered for 5 minutes. Remove cover.
  • Drain water leaving 1/4 cup.
  • Season with salt & pepper.
  • Sprinkle with coriander and lemon juice.
  • Garnish with fresh thyme.
