Ingredients
  • 2 Coconuts
  • 4 Cassava
  • 1 tin Corned Beef
  • Banana leaves for wrapping

Directions
  1. Peel, wash and grate the cassava. Then squeeze out the juice. Grate the coconuts and squeeze out the cream. Heat the cream until it is thick. Place the leaves, pour a little coconut cream on it, put a layer of cassava and pour a bit of coconut cream on top. Put the corned beef in the middle, pour coconut cream on top of the meat and put another layer of cassava. Wrap in banana leaves, ready to be baked in the lovo or steam.

I'm definitely making these sometime soon. I actually found banana leaves at the regular grocery store - in the freezer section. (I used to see it only at the Asian/Hispanic store.) ~~~ Can you suggest some other types of fillings?
