Chipotle-Cedar Salmon

- 4-5 T. soft lite butter (Land o Lakes makes a great product.) shopping list
- 1 t. sweet Hungarian paprika, or for a smokier variety, sweet Spanish smoked paprika shopping list
- 1 t. medium chipotle chili shopping list
- 2 T. ground cumin shopping list
- 1 T. garlic powder shopping list
- 1 t. onion powder shopping list
- ½ t. sea salt shopping list
- 4 T. dark brown sugar shopping list
- 2 T. unsalted butter, melted shopping list
- Large fillet of salmon, skinless, about 2-2/12 lbs shopping list
- 1 sweet onion, sliced thin shopping list
- A cedar plank (you can get them at any BBQ supplies store) shopping list
How to make it
- Prepare medium hot fire for indirect cooking. Soak cedar plank for at least 2 hours before grilling. Combine all ingredients except salmon and onion into a paste. Put salmon on cedar plank and slather on paste. Cover lightly with onion slices. Grill for 10-12 minutes until salmon flakes with a fork, onion slices soften..
