A creamy chicken and rice dish goes with salad. A great quick summer dish.

Ingredients
  • Ingredients;
  • 4 Boneless skinless chicken breast halves ( about 1 ¼ Lb. ), cubed
  • 1 ½ cups uncooked Minute Rice original
  • 1 ¼ cups milk
  • 1 Pkg. ( 10oz ) frozen chopped broccoli, thawed, drained
  • ½ Lb. Velveeta pasteurized process cheese spread, cubed
  • ½ cup Miracle Whip or Miracle Whip Light dressing

Directions
  1. Heat oven to 375º.
  2. Mix all ingredients. Spoon into a 12” x 8” inch baking dish.
  3. Bake 30 minutes or until chicken is cooked through. Serve.
