I make this recipe when I have left over mash potatoes. Most local supermarkets sell large frozen scallops. Nice and light 25 minute meal.

  • 8 lg scallops
  • 300 ml milk
  • 2 salt and pepper
  • 2 tb butter
  • 1 tb flour
  • 1/2 lb mushrooms, sliced
  • 4 tb vermouth or sweet white wine
  • 3 c fresh mashed potatoes
  • parsley, chopped

Directions
  1. Clean the scallops and cut in half and simmer in the milk for 15 minutes. Strain, reserving the liquid.
  2. In the same pan, heat 1 tablespoon of the butter and stir in the flour, cook for about a minute, stirring,
  3. Add the milk gradually, stirring all the time to avoid lumps. You will have a cream sauce.
  4. Season with salt and pepper.
  5. Add the sliced mushrooms and simmer for about 10 minutes longer.
  6. Add the vermouth and finally the scallops.
  7. When heated through, transfer to an ovenproof dish and cover with mashed potatoes, making sure they cover the fish right to the edges.
  8. Dot with the remaining butter, sprinkle with parsley.
  9. Bake in a moderate oven, 350F, for 20-30 minutes, or until the top is turning brown.
