Scallop And Mushroom Pie

- 8 lg scallops shopping list
- 300 ml milk shopping list
- 2 salt and pepper shopping list
- 2 tb butter shopping list
- 1 tb flour shopping list
- 1/2 lb mushrooms, sliced shopping list
- 4 tb vermouth or sweet white wine shopping list
- 3 c fresh mashed potatoes shopping list
- parsley, chopped shopping list
How to make it
- Clean the scallops and cut in half and simmer in the milk for 15 minutes. Strain, reserving the liquid.
- In the same pan, heat 1 tablespoon of the butter and stir in the flour, cook for about a minute, stirring,
- Add the milk gradually, stirring all the time to avoid lumps. You will have a cream sauce.
- Season with salt and pepper.
- Add the sliced mushrooms and simmer for about 10 minutes longer.
- Add the vermouth and finally the scallops.
- When heated through, transfer to an ovenproof dish and cover with mashed potatoes, making sure they cover the fish right to the edges.
- Dot with the remaining butter, sprinkle with parsley.
- Bake in a moderate oven, 350F, for 20-30 minutes, or until the top is turning brown.
