Carrot Puff

- 1 lb baby carrots shopping list
- 1 stick melted butter or margarine shopping list
- 3 eggs shopping list
- 1 cup sugar shopping list
- 3 tbsp flour shopping list
- 1 tsp baking powder shopping list
- 1 tsp pure vanilla extract shopping list
How to make it
- Preheat oven to 350°
- Pam an 8" square baking dish or a 1 qt souffle type dish.
- Cook carrots in salted water until done. The should no longer have any hardness to them.
- Drain the carrots.
- Place butter, eggs, baking powder, sugar and vanilla in a food processor or blender. Add carrots a little at a time and puree.
- Pour into prepared baking dish.
- Bake for 45 minutes or until set. Let stand 5 minutes before serving.
- I have made this many times and usually I cook the carrots in the microwave rather than salted water. The carrots need to be soft. I have cut the sugar to about 2/3 cup and it is still plenty sweet. It can be put together earlier in the day and put in the oven an hour before serving if desired.
