How to make it

  • Preheat oven to 350°
  • Pam an 8" square baking dish or a 1 qt souffle type dish.
  • Cook carrots in salted water until done. The should no longer have any hardness to them.
  • Drain the carrots.
  • Place butter, eggs, baking powder, sugar and vanilla in a food processor or blender. Add carrots a little at a time and puree.
  • Pour into prepared baking dish.
  • Bake for 45 minutes or until set. Let stand 5 minutes before serving.
  • I have made this many times and usually I cook the carrots in the microwave rather than salted water. The carrots need to be soft. I have cut the sugar to about 2/3 cup and it is still plenty sweet. It can be put together earlier in the day and put in the oven an hour before serving if desired.

    This would be a very nice change.

    I well print and place with my Holiday recipes,and perhaps use this year,instead of Sweet Potatoes(or)Yams.
