Mammy Neils Applesauce Cake Recipe
My great-grandma's applesauce cake recipe. Very moist and easy. Use either no frosting or cream cheese frosting. I like to start the raisin/applesauce/spice mix a couple days before, but it's not required.

Ingredients
  • 2 c Applesauce
  • 1/2 c Raisins
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/2 tsp Ginger
  • 1/2 tps Cloves
  • 1/2 tsp Allspice
  • 2 1/2 c Flour
  • 1/2 tsp Salt
  • 2 tsp Soda
  • 1 c Sugar
  • 1/2 c soft Butter
  • 1 Egg
  • 1/2 c chopped Nuts

Directions
  1. A day or two before making, mix applesauce, raisins, & spices in a jar. Refrigerate, shaking periodically to remix. The raisins will plump up & absorb the flavors of the spices. (This step is reccomended but not required.
  2. Day of baking: Heat oven to 350; grease & flour 9 x 13 pan.
  3. Sift together flour, soda, & salt. Set aside.
  4. Cream together butter, sugar, & egg.
  5. Add sifted ingredients.
  6. Add applesauce mixture.
  7. Stir in nuts.
  8. Bake till tests done, approximately 30 minutes.
  9. After cooling, dust with powdered sugar, or frost with cream cheese frosting. Also, a warm piece with some butter spread on top is a family favorite way to serve cake.

Wonderful - have you ever tried this in a bundt pan?


I have not done this in a bundt pan. it's borderline on density as to whether i'd want to try it as a bundt. this cake travels well & i have some great 9 x 13's with tight lids that especially for traveling are easier to manuver than a bundt so have always made it that way.
