How to make it

  • A day or two before making, mix applesauce, raisins, & spices in a jar. Refrigerate, shaking periodically to remix. The raisins will plump up & absorb the flavors of the spices. (This step is reccomended but not required.
  • Day of baking: Heat oven to 350; grease & flour 9 x 13 pan.
  • Sift together flour, soda, & salt. Set aside.
  • Cream together butter, sugar, & egg.
  • Add sifted ingredients.
  • Add applesauce mixture.
  • Stir in nuts.
  • Bake till tests done, approximately 30 minutes.
  • After cooling, dust with powdered sugar, or frost with cream cheese frosting. Also, a warm piece with some butter spread on top is a family favorite way to serve cake.

    i have not done this in a bundt pan. it's borderline on density as to whether i'd want to try it as a bundt. this cake travels well & i have some great 9 x 13's with tight lids that especially for traveling are easier to manuver than a bundt so have always made it that way.
