Ingredients
  • 1 ounces sliced mushrooms
  • 1/2 ounce butter
  • 4 ounces scallops thawed
  • 4 ounces cream sauce (below)
  • 1-1/2 cups spinach fettuccine cooked al dente
  • Grated parmesan cheese
  • Sauce:
  • 1/4 cup shallots minced
  • 1-1/2 teaspoon garlic minced
  • 1-1/2 ounces butter
  • 2 ounces dry vermouth
  • 1-1/3 quarts heavy cream
  • 1/2 ounce lemon juice
  • 1/4 teaspoon white pepper
  • 1/8 teaspoon salt

Directions
  1. Sauté mushrooms in butter for 1 minute then add scallops and continue cooking 3 minutes.
  2. Make sauce by sautéing shallots and garlic in butter until transparent.
  3. Deglaze pan with vermouth then add cream and bring to summer and reduce by 1/3.
  4. Add lemon juice, salt and pepper.
  5. Add sauce to mushroom mixture and bring to simmer and cook 1 minute.
  6. Arrange well drained noodles on serving plate and top with creamed scallops.
  7. Garnish with cheese and serve immediately.
