How to make it

  • Place coconut cream concentrate in a medium saucepan over very low heat. Stir constantly until soft and smooth.
  • Remove from heat and stir in remaining ingredients until well blended and smooth.
  • Place mixture in freezer to firm up (if needed), stirring every few minutes to prevent clumping.
  • Line a cookie sheet with parchment paper and with a small cookie scoop, drop mixture unto paper and refrigerate until firm.
  • Enjoy!

    If the balls have only been chilled in the fridge they'll probably only hold their shape for an hour or so. Frozen though, they'll hold for about twice as long. I'd just stick a little ice pack in with them in a zip lock bag though. That way they'd probably last the whole day. :) Hope that helps! :)

    Holy cow, these look easy and just long do they last at room temp, once cooled and firm, do you know? I can see these going on a ride or hike with me...but maybe in the cooler months?
