Garlic Aioli with Shrimp and Vegetables

- 2/3 cup mayonnaise shopping list
- 1/4 cup plain yogurt shopping list
- juice of 1/2 lemon shopping list
- 1 teaspoon Dijon mustard shopping list
- 2 garlic cloves chopped shopping list
- 1/4 teaspoon paprika shopping list
- 3/4 pound large red potatoes shopping list
- 1 teaspoon salt shopping list
- 3/4 pound carrots cut into sticks shopping list
- 3/4 pound green beans ends trimmed shopping list
- 3/4 pound large shrimp shelled and deveined shopping list
- 4 hard cooked eggs peeled and quartered shopping list
- 1 teaspoon freshly chopped parsley shopping list
How to make it
- In small bowl stir together mayonnaise, yogurt, lemon juice, mustard, garlic and paprika then set aside. In a large saucepan cover potatoes with salted water then bring to a simmer and cook for 25 minutes. Drain and quarter. In a medium saucepan cover carrots with salted water. Bring to a simmer then cook until tender about five minutes. Transfer to a plate with a slotted spoon. Cook beans in the water for 8 minutes then transfer to plate. Cook shrimp until pink about 2 minutes. Drain. Divide aioli among 4 bowls then arrange eggs, vegetables and shrimp on plates and garnish with parsley. Serve warm
