Takes a whole new spin on Zucchini cake by adding the apples.

Ingredients
  • 4 lg. eggs
  • 1 c. vegetable oil
  • 2 c. sugar
  • 2 c. peeled and grated zucchini, drained
  • 3 c. unsifted flour
  • 1 tsp. salt
  • 1 tsp. cinnamon (you could do 1/2 tsp cinnamon and 1/2 tsp nutmeg if you like)
  • 1 tsp. baking powder
  • 2 tsp. vanilla
  • 1 c. chopped nuts (optional) I did not use
  • 2 1/2 c. peeled and chopped apples

Directions
  1. Grease and flour tube pan.
  2. Beat eggs, add oil, sugar, zucchini and vanilla.
  3. Mix well.
  4. Sift together flour, soda, baking powder, salt and spices.
  5. Add to creamed mixture.
  6. Add apples and nuts.
  7. Bake at 350 degrees for 1 hour 15 minutes.
