CHOCOLATE-ZUCCHINI BREAD

- Ingredients: shopping list
- 9 x 5-inch Loaf pan shopping list
- 2 cups all-purpose flour shopping list
- 1 ½ tsp. baking powder shopping list
- ½ tsp. baking soda shopping list
- 1 cup nonfat buttermilk shopping list
- ¾ cup granulated sugar shopping list
- ¼ cup unsweetened applesauce shopping list
- ¼ cup margarine, melted shopping list
- 1 large egg shopping list
- 1 large egg white shopping list
- 1 small zucchini, peeled and shredded ( about 1 cup ) shopping list
- ½ cup chopped walnuts ( optional ) shopping list
- Non-stick vegetable cooking spray shopping list
- For the Crumb mixture: shopping list
- ¼ cup granulated sugar shopping list
- ¼ cup unsweetened cocoa powder shopping list
- 3 Tbs. chilled margarine shopping list
How to make it
- 1)Preheat oven to 350º. Spray the 9 x 5-inch loaf pan with non-stick vegetable spray. To prepare crumb mixture, in a small bowl, combine sugar and cocoa. Cut in margarine until coarse crumbs form. Reserve 2 Tbs.
- 2)In a large bowl, combine flour, baking powder, and baking soda. Mix well. In a medium bowl, combine buttermilk, sugar, applesauce, margarine, egg and egg white. Mix well. Add egg mixture to flour mixture, stirring until just combined. Stir in zucchini and walnuts.
- 3)Pour half of batter into the prepared pan. Sprinkle crumb mixture over batter. Pour remaining batter on top. Sprinkle with the reserved crumb mixture.
- 4)Bake until a toothpick inserted in the center comes out clean, about 55 minutes. Turn bread out onto a wire rack and cool.
