Gingered Mango Salsa

- 1 inch ginger root, raw - diced fine shopping list
- 1 tbsp rice vinegar shopping list
- 3 tbsp pineapple juice, unsweetened shopping list
- 3 tbsp, lime juice, (juice from 1 lime) shopping list

- 1 tsp lime zest shopping list
- 1 cup onions, minced shopping list
- 1/4 cup poblano pepper shopping list
- 1/2 cup red bell pepper shopping list
- 3 tbsp cilantro, fresh - chopped shopping list
- 1/2 cup pineapple, raw chunks - cut to tidbits shopping list
- 2 cloves garlic, raw - minced fine shopping list
- 2 mangos, raw - diced shopping list
- 1 tsp salt shopping list
How to make it
- Zest the lime set it aside then juice the lime.

- Peel the ginger root and slice then dice it fine
- Put the ginger root into a small dish and add the rice vinegar, pineapple juice and lime juice.
- Let the ginger root set in the marinade for at least 15 minutes.
- -----------
- Mix the remaining ingredients well then toss in the ginger root marinade.
- Refridgerate for at least four hours -- longer is better.
- Makes 4 cups
