How to make it

  • Zest the lime set it aside then juice the lime.
  • -----------
  • Peel the ginger root and slice then dice it fine
  • Put the ginger root into a small dish and add the rice vinegar, pineapple juice and lime juice.
  • Let the ginger root set in the marinade for at least 15 minutes.
  • -----------
  • Mix the remaining ingredients well then toss in the ginger root marinade.
  • Refridgerate for at least four hours -- longer is better.
  • Makes 4 cups
