this recipe sounded good to me...the recipe is from the Casa Sedona Bed and Breakfast Inn Sedona, Arizona

Ingredients
  • 1 3/4 c. flour
  • 1/2 c. quick oats
  • 1 c. flaked coconut
  • 1/2 c. brown sugar
  • 2 t. baking powder
  • 1/2 t. baking soda
  • 1 1/2 c. pineapple juice
  • 1/2 c. applesauce
  • 1/4 c. butter, melted
  • 1 egg
  • 1 t. vanilla

Directions
  1. In a large bowl, combine first six items,
  2. in a separate bowl, blend remaining ingredients until smooth then fold into dry ingredients until just moistened.
  3. Spoon into greased mini-muffin tins.
  4. Bake at 350 degrees for 25 - 30 minutes
  5. . Makes 24 mini-muffins.
