How to make it

  • Pick over the lentils for stones or misshapen pieces
  • Sauté the onions and garlic in a small amount of oil, once softened add the broth, tomato paste, and all the spices.
  • Bring to a gentle boil, then add the lentils, turn down the heat and simmer for 45 minutes – 1 hour,taste and add salt and pepper if necessary. Until it is a thick stew, adding more liquid if needed.
  • Serve with naan and rice
