Grandma Kehlers Cucumbers

- 2 or 3 good size cucumbers shopping list
- a splash of white vinegar shopping list
- 1 medium onion, Mom always used yellow, but a red would be pretty in this shopping list
- sour cream to cover everything else, I do not have a measure as the cucumbers may be different cup amounts when done each time. shopping list
- salt and pepper to taste shopping list

- 1 cup water with 1 tablespoon salt added shopping list
How to make it
- Wash the cucumbers.
- Take a fork and run it down the sides to cut little groves into the green of the cucumber, not around....
- Slice off the ends off and throw them away.
- Now slice the rest of the cucumber into about 1/4 inch slices, thinner if you prefer, I like the slightly thicker crunch.
- Place into a medium bowl.
- Cover with a mixture of water and salt.
- Chop the onion up into medium size chunks, add to the cucumbers.
- Make sure all of the veggies are covered by the salt water.
- Let set in the fridge until ready to serve, or at least one hour for the flavors to blend and everything to get nice and cool.

- When ready to serve, get out of the fridge and drain.
- Now throw on a splash of white vinegar.
- Then add enough sour cream to coat the cucumbers and onions.
- Salt and pepper this to taste.
- Serve cold.

- If there are left overs, I want you to know that the cucumbers tend to make this a little watery as it sets being ready as a snack or part of the next meal. This never took away from the fact that it is so good....

- NOTE: Originally the cucumbers were soaked in the salt water because it was believed that the green outer was poisonous, but that salt could kill the poison. Now we know better.... But to be honest when you make it with out the pre-soak, at least for me, it is not the same.
