Simple Curry Chicken with Agave Sauce

- 8 pieces of chicken (thighs and legs,etc.) shopping list
- salt, pepper, seasoning salt, garlic salt shopping list
- 1 T oil for frying shopping list
- 1/3 cup honey shopping list
- 1/2 cup agave nectar* shopping list
- 4 T Dijon or yellow mustard shopping list
- 4 T lemon juice shopping list
- 2-3 T Indian curry powder shopping list
- 3 T chopped fresh garlic shopping list
- *also called syrup is a sweetener commercially produced in Mexico, from the core of the agave plant, called the piña. shopping list
- Note: These are approximate amounts shopping list
How to make it
- Remove skins from chicken
- Season chicken with salt, pepper, seasoning salt
- Brown chicken over medium-high heat in a saute pan, about 4 minutes on each side
- Preheat oven to 350 F
- Place browned chicken in a baking dish
- Whisk together honey, agave, mustard, lemon juice, and curry powder
- Pour sauce over chicken pieces (it is okay if it is a bit runny)
- Sprinkle fresh garlic over sauced chicken
- Cover chicken in pan with foil or lid
- Bake for about 40 minutes covered, basting once or twice with sauce
- Uncover and bake about 5 minutes
- Serve with rice and a salad and enjoy!
