Ingredients
  • 8 pieces of chicken (thighs and legs,etc.)
  • Salt, pepper, seasoning salt, garlic salt
  • 1 T oil for frying
  • 1/3 cup honey
  • 1/2 cup agave nectar*
  • 4 T Dijon or yellow mustard
  • 4 T lemon juice
  • 2-3 T Indian curry powder
  • 3 T chopped fresh garlic
  • *also called syrup is a sweetener commercially produced in Mexico, from the core of the agave plant, called the piƱa.
  • Note: These are approximate amounts

Directions
  1. Remove skins from chicken
  2. Season chicken with salt, pepper, seasoning salt
  3. Brown chicken over medium-high heat in a saute pan, about 4 minutes on each side
  4. Preheat oven to 350 F
  5. Place browned chicken in a baking dish
  6. Whisk together honey, agave, mustard, lemon juice, and curry powder
  7. Pour sauce over chicken pieces (it is okay if it is a bit runny)
  8. Sprinkle fresh garlic over sauced chicken
  9. Cover chicken in pan with foil or lid
  10. Bake for about 40 minutes covered, basting once or twice with sauce
  11. Uncover and bake about 5 minutes
  12. Serve with rice and a salad and enjoy!
