Roasted Bell Pepper Soup Recipe

Ingredients
  • 2 (15 oz.) cans of cannellini beans, drained and rinsed
  • 2 (14.5 oz.) cans of chicken broth
  • 3 red bell peppers
  • 1 chopped onion
  • 1 tbsp. of minced garlic
  • 1 tbsp. of olive oil
  • salt and pepper

Directions
  1. First you will preheat over to broil.
  2. Next take the bell peppers on a baking sheet and broil(each side must be black.)
  3. Now place the peppers in a brown bag, and allow them to cool(approx 20- 30 min.)
  4. You want to peel the peppers now, throwing the skins in the trash.
  5. Then you can shop the peppers.
  6. Saute onion, garlic in olive oil in a pan over medium flame.
  7. Now you can add the chopped peppers and saute 2-3 min.
  8. Next you can add the broth and beans.
  9. In your blender, puree mixture until creamy.
  10. Add back to pot and heat throroughly!
  11. Serve!

Alterations


Try drizzling with a roasted yellow pepper sauce (roasted yellow peppers, salt, pepper, plain yogurt) or/and a mint sauce (mint, plain yogurt, salt and pepper). It makes a beautiful presentation and the offset of the flavors makes for an interesting and lively dish.
