Zuchinni Pecan Muffins Recipe
This is a muffin recipe I just threw together this morning. It's a bit dense but is cruchy and full of good fats (nuts, canola etc) and veggies(the zuchinni) and tastes slightly of spice cake Good for using up those summer zuchinni!

Ingredients
  • 2 cups of flour (I used unbleached all purpose)
  • 1 cup of sugar
  • 1 tablespoon of baking powder
  • pinch of sea salt
  • 1 medium to large zuchinni grated with a box grater
  • 2 eggs slightly beaten
  • 1/2 c milk (i used 1percent organic milk)
  • 1/4 c canola oil
  • 1/2 cup of finely chopped pecans
  • 1 teaspoon of freshly zested lemon
  • 1 teaspoon of vanilla extract
  • 1 teaspoon (or more if you like the taste ) of pumpkin pie spice

Directions
  1. Preheat oven to 350 degrees.
  2. Add dry ingredients (flour,sugar, baking powder, salt, lemon zest , pie spice) in a mixing bowl.
  3. Beat eggs and add milk,oil, vanilla to eggs
  4. Slowly fold in wet ingredients.
  5. After these are well combined add in zuchinni and nuts and stir well until combined.
  6. Bake in well greased muffin tins or paper muffin cups if preferred for 20-25 minutes until slightly brown on top.
  7. They will not rise alot and will be dense. They should be slightly crunchy as well.
